Halcyon Chardonnay Museum

Our flagship Chardonnay is made from 100% Gingin clone grapes sourced from our home block, planted in 1978. These vines, though low yielding due to their age, produce fruit of exceptional quality, characterised by concentrated flavours and balanced acidity. After hand-picking, the fruit is pressed into one new oak puncheon and one seasoned oak puncheon. The wine undergoes primary fermentation followed by malolactic fermentation, and is aged on oak for 12 months before bottling.
