Halcyon Cabernet Sauvignon

Our flagship Cabernet Sauvignon comes from our home block, planted in 1978. The fruit is carefully hand-picked and sorted before undergoing a 30-day fermentation on skins. After fermentation completes, the fruit is basket pressed. The wine then matures for 12 months in a combination of 20% new and seasoned French oak before bottling. The 2018 vintage was exceptional, resulting in a wine of profound complexity and deep flavour. We recommend cellaring this wine for up to 10 years.
